SWEET QUINOA BREAKFAST
Ingredients
• 1 cup quinoa - red, white or mixed
• 2 cups water
• 1 tsp sesame oil
• ¼ cup slivered almonds
• ½ cup dried apricots, diced
• 2 tbsp maple syrup
• ½ tsp orange zest
• ½ tsp cinnamon
Directions
• 1 cup quinoa - red, white or mixed

Directions
- Bring water and quinoa to a boil, cover, cook until water is absorbed and quinoa is tender, about 15 minutes.
- Fluff quinoa with a fork and cover.
- Heat sesame oil in a frying pan and sauté almonds for 2 minutes.
- Add apricots, maple syrup, orange zest, and cinnamon.
- Stir until heated.
- Add quinoa, gently stir.
- Serve with a dollop of apple sauce.
